{Recipe} Cheesecake Stuffed Strawberries

These are divine! And perfect for just about any occasion.
Found it on The Sweets Life's Blog and thought this would be perfect to share with my readers, just in time for Valentine's Day.
Your sweetie will be very grateful.  Pour a glass of sparkling champagne along with it and voila!

Five ingredients and quick and easy to make - go for it! And just thank me later. ;)




Cheesecake Stuffed Strawberries

Ingredients:
-1 lb large strawberries
-8 oz. cream cheese, softened (can use 1/3 less fat)
-3-4 tbsp powdered sugar (4 tbsp for a sweeter filling)
-1 tsp vanilla extract
-graham cracker crumbs

Directions:
1. Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out with a paring knife, if necessary (some may already be hollow inside). Prep all strawberries and set aside.
2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or ziploc with the corner snipped off. Fill strawberries with cheesecake mixture. Once strawberries are filled, dip the top in graham cracker crumbs. If not serving immediately, refrigerate until serving.

Ingredients
  • 1 cup tart cherry juice
  • 1/2 banana
  • 1/2 cup soy milk or 4-6 oz soy yogurt (if using soy yogurt, add an additional 1/2 cup fat-free milk)
  • 5 ice cubes
  • 1/4 tsp pure vanilla extract
Directions
Combine the cherry juice, banana, milk or yogurt with fat-free milk, ice and vanilla in a blender. Blend until smooth.
