Chai Tea Shortbread Cookies with #GayLeaFoods Plus KitchenAid Giveaway

When I think back to memories of prepping for the Holidays way back when, the enticing scent of baked goods in my moms kitchen would instantly pop into my mind.
Coupled with the sounds of Christmas Carols humming in the background, this is just one other reason why Christmas just happens to be my absolute favourite holiday.

It's not every day you get the feel-good, deep-in-your-soul, solacing kinda feeling then when you remember such memories that bring back the child in you. One of the recipes that always recaptures my childhood during the holidays is my moms Shortbread Cookies.
Tender, Buttery goodness.

What I love about Shortbread Cookies is that it's adaptable - you can do so much with it just by adding a few things like rosemary or toffee bits. I also love the savoury variety which you can achieve with some cardamom. Add in some shredded coconut and voila! Delicious curry and coconut delight!
You see, definitely so much you can create with a good shortbread recipe.
It is the easiest, most versatile cookie you can make. And every baker needs to have their own fool-proof recipe in their arsenal.

I love a good Chai Tea so I thought I would combine the two to create an exotic twist to comfort.
I am planning on serving these over the holidays with a combination of other Shortbread concoctions and also would make a great gift for neighbours, friends, family, teachers, etc.
Just place in cellophane wrap or mason jars complete with some pretty ribbon and tag and you've got delicious, home-made gifts anyone will love to receive.

Here's my recipe - hope you enjoy!

CHAI TEA SHORTBREAD COOKIES

Ingredients:
1 lb. unsalted butter, softened
1 1/2 tsp salt
2/3 cup granulated sugar
4 cups all-purpose flour
1 cup and 3 tbsp cornstarch
3 tbsp of loose leaf Chai Tea (or 3 teabags)

Method:
In a food processor, combine the flour, cornstarch and chai tea until well combined; put aside in a bowl.

In a stand-mixer, combine the softened butter, salt, and sugar. Whip on medium speed for 5-6 minutes, until the butter becomes pale and white, and increases in volume. On low-speed, mix in the flour, cornstarch.

Divide dough into two and spread each out on parchment paper. Roll into 1.5" - 2" logs, twist ends and refrigerate for an hour (until cold & firm) to overnight (you can freeze from here as well).

When you're ready to bake, pre-heat oven to 150 degrees, cut shortbread cookies and place onto parchment lined cookie sheet.

Bake for approximately 20-30 minutes, until the edges just begin to color. (Shortbread should remain more white in color.)

Remove cookies onto cooling tray and let cool. Enjoy!

Happy baking!

I honestly had no clue until I saw it all over Facebook.

Although I have zero time to whip something up today, I'm definitely going to be hitting the baking sheets this weekend with this scrumptious recipe.

Feel less guilty with some Whole Wheat Double Chocolate Mint Chip Cookies (and your kids won't even know it's whole wheat! Double score!)
I love cookies, I love chocolate and the chocolate and mint combo is always a delight to my senses!

The Best Chocolate Chip Cookies

A couple weeks ago The New York Times shared an article on how to make THE BEST Chocolate Chip Cookies.

Here are the recommended strategies to make your own AMAZING CCCs from the NYTimes article:

  • make sure all your ingredients start out at room temperature
  • don't overmix
  • after making your cookie dough, let it rest for 24-36 hours before baking. This allows the dough and other ingredients to fully soak up the liquid (in this case, the eggs) which bakes to a better consistency
  • use an excellent quality chocolate with at least 60% cacao content. Ratio of chocolate chips to cookie dough should be approximately 40:60
  • form the dough into large six-inch-wide cookies. This allows for optimum mixing of textures and flavours (crunchy & chewy, butter & caramel all in one)
  • salt: use a good sea salt in the dough, and then sprinkle more on top of the cookiesbefore baking. Fleur de sel (available in very pretty containers at Whole Foods) is divine.

Here is the NY Times Recipe. Let me know what you think.
Time: 45 minutes (for one 6-cookie batch), plus at least 24 hours’ chilling

Ingredients:
  • 2 cups minus 2 tablespoons (8 1/2 ounces) cake flour
  • 1 2/3 cups (8 1/2 ounces) bread flour
  • 1 1/4 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons coarse salt
  • 2 1/2 sticks (1 1/4 cups) unsalted butter
  • 1 1/4 cups (10 ounces) light brown sugar
  • 1 cup plus 2 tablespoons (8 ounces) granulated sugar
  • 2 large eggs
  • 2 teaspoons natural vanilla extract
  • 1 1/4 pounds bittersweet chocolate disks or fèves, at least 60 percent cacao content (see note)
  • Sea salt.
Instructions:
  1. Sift flours, baking soda, baking powder and salt into a bowl. Set aside.
  2. Using a mixer fitted with paddle attachment, cream butter and sugars together until very light, about 5 minutes. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla. Reduce speed to low, add dry ingredients and mix until just combined, 5 to 10 seconds. Drop chocolate pieces in and incorporate them without breaking them. Press plastic wrap against dough and refrigerate for 24 to 36 hours. Dough may be used in batches, and can be refrigerated for up to 72 hours.
  3. When ready to bake, preheat oven to 350 degrees. Line a baking sheet with parchment paper or a nonstick baking mat. Set aside.
  4. Scoop six 3 1/2-ounce mounds of dough (the size of generous golf balls) onto baking sheet, making sure to turn horizontally any chocolate pieces that are poking up; it will make for a more attractive cookie. Sprinkle lightly with sea salt and bake until golden brown but still soft, 18 to 20 minutes. Transfer sheet to a wire rack for 10 minutes, then slip cookies onto another rack to cool a bit more. Repeat with remaining dough, or reserve dough, refrigerated, for baking remaining batches the next day. Eat warm, with a big napkin.
Yield: 1 1/2 dozen 5-inch cookies.

Note: Valrhona fèves, oval-shaped chocolate pieces, are at Whole Foods.
